From Scratch: Cilantro Lime Dressing

Fried Chicken Salad with Cilantro Lime Dressing and No Tomatoes (I was out)

 

Today’s idea is simple yet effective. I go through phases where I eat a lot of salads and then I don’t eat any for awhile. Avocados have been on sale at Aldi and Sunflower Market lately, so I’ve been buying them for salads and have been on a bit of a salad kick. Because I don’t always eat salad, I’ve found that it’s not worth buying salad dressing. I never finish a bottle before I get really tired of it, or it goes bad. The other day I found myself really craving some cilantro. I thought there had to be some kind of cilantro dressing recipe so I went to Pinterest and found this one. I changed it up a bit (I never tried it with the sugar or salt).

Cilantro-Lime Vinaigrette
Adapted from Recipe by Our Best Bites

1/4 c. fresh lime juice (about 2-3 juicy limes)
1/4 c. white wine vinegar
4-5 cloves garlic
1 c. olive oil
1/2 c. roughly chopped cilantro, stems removed

Combine all ingredients in the jar of your blender. Blend until ingredients are completely combined. Serve with greens.
